These amazing ingredients create a spectacular sauce for the chicken. The chicken breasts are seasoned with salt and pepper before being cooked in a skillet until golden and cooked through.   • For a lighter sauce, you can use half and half or evaporated milk.

Here's how to make it:

  1. Season the chicken with salt and pepper. Heat a little olive oil in a large skillet. Add the chicken and cook over medium-high heat for about 4 to 6 minutes on each side, or until browned and cooked through. Remove from pan and set aside.
  2. Reduce heat to medium and add the cream, broth, garlic powder, Italian seasoning and Parmesan cheese. Cook for a few minutes, stirring, until mixture thickens.
  3. Add the sundried tomatoes and spinach. Cook until spinach wilts, about 2 minutes. Put the chicken back and cover with the sauce.

Made it almost exactly to recipe and it got rave reviews. I did use 1/2tsp "Better than Bullion" dissolved in 4oz hot water rather than opening a qt of chicken broth just for 1/2 cup, but the recipe, including amounts of spinach was perfect, both for taste and presentation. Thanks.
