Ingredients
- 6 ounces grated Parmesan cheese
- 1 egg
- 3/4 cup vegetable oil
- 1 cup milk
- 1 1/2 cups tapioca flour
- 1/2 teaspoon salt
Here's how to make it:
- Put all the ingredients into a blender and pulse to combine. (For the best results, grate your own fresh Parmesan cheese.)
- Spray mini muffin tins with oil spray. Fill muffin tins 3/4 full with the batter.
- Bake at 350 degrees F for 15 to 20 minutes, or until puffy and golden brown. Turn out of the pan immediately and eat hot. Store any leftovers in an airtight container.
