All you need to make this creamy goat cheese spread is a roll of goat cheese, almonds, dried apricots, fresh parsley, apricot preserves and honey. The room temperature goat cheese is rolled in the chopped ingredients and served with crackers. So simple and easy, and it's also vegetarian and gluten-free!

Here's how to make it:

  1. Spread the apricot preserves on the bottom of a serving dish. Combine the almonds, apricots and parsley. Toss to combine. Roll the goat cheese in the mixture until completely covered.
  2. Set the goat cheese on top of the apricot preserves. Drizzle with honey. Serve with crackers.
