Pumpkin spice muffins are my favorite thing about autumn. This easy pumpkin spice muffin recipe is a hit with my family. Loaded with fall flavor, this delicious pumpkin recipe tastes like pumpkin pie in muffin form. Great as a grab-and-go breakfast or on-the-go snack, this is my favorite pumpkin recipe (and I hope it will become yours, too)!

To make these moist pumpkin muffins you will need to gather the following ingredients: all-purpose flour (you could use gluten-free flour), pumpkin pie spice, baking soda, salt, canned pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil and vanilla extract.

These fall-inspired muffins are delicious at room temperature or even slightly chilled. Serve them as a snack, dessert or even for brunch or breakfast with that hot pumpkin spice latte. While you nibble on these irresistible muffins, you are also getting the health benefits of pumpkin.

Ingredients

• 1 3/4 cups all-purpose flour
• 1 tablespoon pumpkin pie spice
• 1 teaspoon baking soda
• 1/2 teaspoon salt
• 15 ounces (1 can) pure pumpkin puree
• 1/2 cup granulated sugar
• 1/2 cup brown sugar, packed
• 2 large eggs
• 1/2 cup vegetable oil
• 1 tablespoon vanilla extract

Recipe Notes

• You could add some ground cinnamon to the batter before baking.

• Be sure to use pumpkin puree and not pumpkin pie filling.

• For a gluten-free muffin, use gluten-free flour.

• Store the muffins in an airtight container in the fridge to keep them fresh.

Here’s how to make it:

1. Preheat oven to 375 degrees F. Place paper baking cups into a muffin pan (or spray muffin pan with nonstick cooking spray). Set aside.
2. In a medium bowl, whisk the flour, pumpkin spice, baking soda and salt until well combined. Set aside.
3. In large bowl, whisk together the pumpkin, sugar and brown sugar. Beat in eggs, then vegetable oil and vanilla extract. Slowly whisk in the flour mixture until there are no lumps.
4. Fill muffin cups 3/4 full. Bake muffins for 18 to 20 minutes, or until a toothpick inserted in the center comes out clean. Sprinkle a bit of sugar on top, if desired.
