Ingredients

• 2 cups flour (all-purpose or gluten-free)
• 1 teaspoon baking powder
• 1 teaspoon baking soda
• 1 teaspoon salt
• 1 1/2 cups granulated sugar
• 1 egg
• 1 1/2 teaspoons vanilla
• 5 - 6 overripe bananas, mashed
• 1/4 cup vegetable oil
• 1/2 cup milk
• 1 cup chopped nuts (pecans, almonds, walnuts or your favorite)

Here's how you make it:

1. Combine the flour, baking powder, baking soda and salt in a bowl. (For gluten-free banana bread use gluten-free flour.)
2. Combine the rest of the ingredients in another bowl. 
3. Mix wet and dry ingredients together.
4. Pour into two greased and floured 9x5-inch loaf pans. Bake at 350 degrees F about 30 minutes. (I like to slightly under bake my bread. Just where it's a tiny bit moist in the center on the top. Before it's completely cool, I cover with plastic wrap. This makes the top of the bread ooey gooey and super moist.) Store the banana bread in an airtight container.
