Roasted red pepper and basil dip is so delicious, and it's literally the easiest recipe ever. It's healthy, gluten-free, and will satisfy even the pickiest of eaters. It's so good that you'll feel like you're cheating on your healthy diet

Serve this delicious dip as an appetizer with almost anything that your heart desires (crackers, cucumber slices, red pepper slices, bread sticks, etc.). If you decide to double this recipe (as I do with almost everything), do not double the olive oil. Use 3 tablespoons of extra virgin olive oil instead. Everything else doubles perfectly.

  2. Blend until smooth.
