Ingredients

  • 1 3-pound butternut squash, peeled, seeded and cut into 1-inch pieces
  • 2 tablespoons extra virgin olive oil
  • 12 sage leaves

Here's how to make it:

  1. In large bowl, toss squash with olive oil and sage. Season with salt and pepper. 
  2. Spread squash on baking sheet in single layer. Roast in a preheated 425-degree F oven for about 40 minutes, until tender and lightly browned, tossing once halfway through.
