Ingredients
- 2 small overripe bananas (about 3/4 cup), mashed
- 1 cup natural peanut butter (smooth or chunky), at room temperature
- 1/4 cup real maple syrup (or honey)
- 1 medium egg
- 3/4 cup almond flour
- 1 teaspoon ground cinnamon
- 1 teaspoon baking soda
- 1/8 teaspoon salt
- 3/4 cup chocolate chips (milk, semisweet or dark chocolate)
- 1/2 cup chopped pecans or walnuts (optional)
Here's how to make it:
- In a large mixing bowl, add the mashed bananas, peanut butter, maple syrup and egg. Stir to combine. Add the almond flour, cinnamon, baking soda and salt. Stir to combine. (You can use smooth or chunky peanut butter, and you could use almond butter instead of peanut butter. You could use honey instead of maple syrup.)
- Fold in the chocolate chips, and the pecans, if using. (You can use milk, semisweet or dark chocolate chips. You could use walnuts instead of pecans, or no nuts at all.)
- Smooth the batter into an 8x8-inch baking pan that's been lined with parchment paper.
- Bake in a preheated 325-degree F oven until golden and a toothpick comes out clean, about 23 minutes.
- Allow to completely cool before slicing and serving.
- Store leftover cookie bars in an airtight container (in the refrigerator lasts longer).
