Summer is made for spritzes. Originally, a spritz was a Venetian wine-based cocktail that was served as an apéritif across Italy. Today, a spritz typically consists of three ingredients: prosecco, a mixer (such as soda water) and the flavoring ingredient (such as a bitter liqueur or a sweeter syrup). On a trip to Venice, my husband and I enjoyed a daily aperitivo, similar to “happy hour” in Venice, which typically includes a spritz known as a Veneziano. This refreshing cocktail is made with prosecco, bitter liqueur such as Aperol or Campari, with a sparkling mineral water topper. It's simply divine.

The Hugo Spritz cocktail is a newer variation on the spritz, and it's pure wow. Light, slightly sweet and totally refreshing, the Hugo Spritz is said to have been created by Roland Gruber, a bartender from the Alpine region of Northern Italy, in 2005. The mildly floral drink features elderflower liqueur and follows the classic "3-2-1" spritz formula – three parts prosecco, two parts elderflower liqueur and one part soda water. The Hugo Spritz cocktail is garnished with slices of lime and sprigs of mint, which add to its total refreshment. (Plus, the garnishes add the health benefits of lime and the health benefits of mint.)

To make this light and lovely Italian cocktail, you'll need chilled prosecco, elderflower liqueur (such as St. Germain) and soda water. The lime slices and fresh mint sprigs are optional garnishes, but totally recommended for the full Hugo experience. Just combine the ingredients in a large wine glass (or your favorite spritz glass) and start toasting the night away.

Serve this refreshing cocktail whenever you want to feel like you're in Venice, or really anytime at all. This drink is a perfect cocktail for when you're hosting friends and family. They'll be delighted by such a light and lovely escape!

Ingredients

• 3 ounces chilled prosecco
• 2 ounces elderflower liqueur (such as St. Germain)
• 1 ounce soda water (or to taste)

Garnishes

• 1 - 2 fresh lime slices, for garnish
• 1 - 2 mint sprigs, for garnish
• ice, to fill the glass

Here's how to make it:

1. In a large wine glass or your favorite spritz glass, add as much ice as you'd like (I filled mine about half full).
2. Add the prosecco and elderflower liqueur. Top with soda water.
3. Garnish with lime slices and mint sprigs, if desired, and serve. Cheers!
