Cook Time: 0 minutes
Total Time: 10 minutes
Servings: 8 (makes about 2 cups)
Ingredients
- 3/4 English cucumber, partially peeled (striped) or 3 Persian or mini cucumbers
- 1 teaspoon kosher salt (divided)
- 4 - 5 garlic cloves, peeled, finely grated or minced
- 1 teaspoon white vinegar
- 1 tablespoon extra virgin olive oil
- 2 cups plain Greek yogurt
- handful of chopped fresh dill or mint, chopped (optional)
- 1/4 teaspoon ground white pepper or black pepper
Optional for Serving
- pita bread
- vegetables, sliced
Here's how to make it:
- Use a box grater or small food processor to chop or grate the cucumbers. Add them to a medium bowl and sprinkle with a 1/2 teaspoon of salt and toss. Place the cucumbers on a clean kitchen towel or paper towels to press out the liquid in them.
- Wipe out the same bowl and add the garlic, the remaining 1/2 teaspoon of salt, vinegar and olive oil. Use a fork to mix and combine. Add the cucumbers back to the bowl.
- Add the yogurt, pepper and fresh herbs if you are using. Stir to combine. (If you have the time, place the mixture in the refrigerator for 30 minutes or more to help thicken the sauce and blend the flavors.) Serve as desired. Store the sauce covered in the fridge.
