My love for chickpeas continues! I wanted to make this delicious recipe for creamy lemon chickpeas with fresh herbs, but I was out of canned chickpeas. I did, however, have a bag of dried chickpeas in the pantry. I had never cooked dried chickpeas before but I knew with the Instant Pot™ I could cook these high-protein, high-fiber gems quickly and easily.
To cook dried chickpeas in an Instant Pot™ you only need two ingredients. Here is your shopping list for this Instant Pot™ recipe: dried chickpeas (and water). You can also add a pinch of salt to the party if you'd like. The chickpeas are washed well then added to the pressure cooker along with some water. Pressure cook for 45 to 55 minutes, and you have healthy chickpeas to use in recipes or to toss into salads or grain bowls.

- 1 pound dried chickpeas, rinsed and pickled through for stones
- pinch of salt (optional)
- 6 - 7 cups of water
Here's how to make it:
- Place all ingredients in the Instant Pot™.
- Pressure cook for 45 minutes for firmer chickpeas and 55 minutes for more well-done chickpeas. If your Instant Pot™ does not release pressure automatically, manually release pressure cooker at the end of cooking time for 7 to 10 minutes.
- Use in recipes or save in fridge with some of the liquid for 4 to 5 days.
