But the addictive flavor comes from Boursin – a rich, spreadable cheese made with garlic, parsley and chives – which adds creamy garlic flavor to everything it touches. The young French cheesemaker François Boursin created this crave-able cheese in 1963 after being inspired by fromage frais, a traditional French dish that blends garlic, fresh cream, soft cheese and herbs. His incredible creation is famous for its creamy texture and delicious flavor that's as wonderful in recipes as it is simply spread on a cracker.

Ingredients
- 2 tablespoons extra virgin olive oil
- 3/4 cup onion, diced
- 3/4 cup yellow bell pepper, diced (or your favorite bell pepper)
- 8 ounces baby bella cremini mushrooms, sliced
- 8 ounces cherry tomatoes, sliced in half (or unsliced or a combination)
- 8 ounces fresh baby spinach
- 1 cup heavy whipping cream
- 8 ounces (about 1 1/2 packages) Boursin garlic and fine herb cheese
- 12 ounces (1 package) short pasta, uncooked (I used rotini)
- salt and black pepper, to taste (optional, but I used about 1/3 teaspoon of each)
- Parmesan cheese, shredded, for garnish (optional)
- fresh basil or parsley, for garnish (optional)
Here's how to make it:
- In a large pot of boiling water, cook pasta according to package directions. Drain pasta and put back into the pot or into a large bowl, covered, and set aside. (You can use regular pasta, gluten-free pasta, chickpea pasta, etc.)
- While the pasta is cooking, make the sauce. In a large skillet or saucepan with sides over medium-high heat, add the olive oil, onions and yellow peppers. Stir to combine. Add the mushrooms and tomatoes. Stir to combine.
- Add the spinach and stir until wilted. Reduce heat to medium.
- Add the heavy cream and the Boursin. Season with salt and pepper, to taste, if desired. Stir until the cheese melts, sauce thickens and everything is integrated, about 4 minutes. Your spoon should leave a line as you stir through the sauce.
- Pour the sauce over the pasta and toss to combine.
- Serve immediately. Garnish with shredded Parmesan cheese and/or fresh basil or parsley, if desired. Store leftovers in an airtight container in the refrigerator and reheat in the microwave.
