The recent winter storm had me homebound for a few days, so what's a girl to do? Bake! With limited ingredients and no way to get to the grocery store, I was pleasantly surprised to find that I had the three ingredients needed to make a banana bread shortcut recipe. But how can three ingredients turn into a moist loaf of banana bread? This shortcut banana bread recipe blew my mind!
This high-protein banana bread recipe is ready for the oven in just a few minutes. The banana loaf is moist, tender and full of banana flavor. Plus you get the health benefits of bananas and the health benefits of protein in every tasty bite. (The banana bread is high in sugar, so don't overdo it!)
Here is your short shopping list for this three-ingredient banana bread recipe: overripe bananas, a can of sweetened condensed milk and self-rising flour. Don't use all-purpose flour for this recipe or the loaf will not rise. You could add any additional ingredients you'd like to the batter. I had some dark chocolate chips in the freezer, so mine turned into a chocolate chip banana bread.
Enjoy slices of the banana bread as a snack, for breakfast or as part of a brunch spread. The banana bread is also the perfect dessert after dinner with a cup of milk or coffee.

Ingredients
- 5 overripe bananas
- 14 ounces (1 can) sweetened condensed milk
- 2 1/2 cups self-rising flour
Optional Ingredients
- pecans or walnuts, chopped
- chocolate chips
- vanilla extract
Here's how to make it:
- Mash the bananas in a mixing bowl.
- Stir in the sweetened condensed milk.
- Whisk in the flour. Do not overmix. (If you overmix the batter, it will affect the texture of the banana bread.) Stir any any additional ingredients, if desired. (I added about 1/2 cup of dark chocolate chips.)
- Spread the batter into a buttered loaf pan.
- You could sprinkle your optional ingredient on top of the loaf before baking. (I sprinkled with more dark chocolate chips.)
- Bake in a preheated 350-degree F oven for about 40 to 45 minutes, or until a toothpick comes out almost clean. (Mine was done at 40 minutes.) Remove and cool before removing from the pan and slicing. Keep the bread in an airtight container to keep it fresh.
