Carrots can be boring. While I always have fresh carrots in my produce drawer in the fridge, I often grab the broccoli, squash, greens or other vegetables that share the drawer. But after making this roasted curry carrots recipe, carrots may be appearing on my dinner table more often.
Carrots are roasted in a spice blend that spotlights curry, producing deliciously seasoned tender carrots – and an intoxicating aroma in your kitchen while they bake. Another bonus is that you only need five simple gluten-free ingredients to make this roasted carrot recipe. These vegan roasted curried carrots make the perfect side dish for any protein – from chicken to turkey to pork to beef to lamb. I served mine with air fryer pork chops and a salad. The leftovers will be tossed into a salad or added to a grain bowl. Delicious and nutritious!

Ingredients
- 1 pound carrots, cut into chunks
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 tablespoon curry powder
- 1 tablespoon olive oil or avocado oil
Here's how to make it:
- Put the carrots into a baking dish. (If you use baby carrots you can leave them whole. For larger carrots, cut them into chunks about the same size for even cooking.)
- Sprinkle with the garlic powder, onion powder, curry powder and oil. Season with salt and black pepper. (Add more or less seasonings to suit your tastes.)
- Stir well to coat the carrots. Spread into a single layer.
- Bake in a preheated 375-degree F oven for about 30 minutes, stirring halfway through, until the carrots are tender.
- Serve. (For more flavor you could squeeze some lime juice over the cooked carrots.) Store any leftover carrots in an airtight container in the fridge and reheat in the microwave.
