Pork chops have almost taken over the top spot at my house over chicken. Almost. Whether fried, baked or grilled, a juicy pork chop cannot be beat for a quick, delicious, high-protein dinner. This baked breaded pork chops recipe is so incredibly moist because of a secret ingredient I use often in my recipes: mayonnaise.
The prep for this pork chop dinner is almost effortless, and the ingredient list short. Here is your gluten-free shopping list for this baked pork chops recipe: bone-in pork chops, breadcrumbs or cracker crumbs, mayonnaise, Parmesan cheese, garlic powder and dried oregano. If you don't have dried oregano, you could use Italian seasoning or dried basil.
Serve this high-protein recipe with your favorite side dishes. I served mine with corn ribs (thank you, Trader Joe's) and an arugula salad with creamy charred lemon salad dressing. Delicious!

Ingredients
- 2 bone-in pork chops, about 1-inch thick
- 1/3 cup breadcrumbs or cracker crumbs (I used cracker crumbs)
- 2 tablespoons mayonnaise
- 2 tablespoons Parmesan cheese, finely grated
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
Here's how to make it:
- Put the breadcrumbs or cracker crumbs on a plate. In a small bowl, stir together the mayonnaise, Parmesan, garlic powder and oregano. Season with salt and black pepper, if desired. (I added black pepper but no additional salt.)
- Dip both sides of the pork chops into the mayo mixture, and then press both sides into the crumbs, coating completely. Put into an oiled baking dish. (I drizzled my baking dish with olive oil.)
- Bake in a preheated 325-degree F oven for about 55 minutes to 1 hour, or until pork is cooked through. (Pork is cooked through at 145 degrees F on a food thermometer.)
- Serve. This recipe could easily be doubled (four pork chops) and cooked in a 13x9-inch baking pan.
