Spice cakes and gingerbread just smell like the holidays. The warm baking spices wafting through the air makes you want to see family, spread kindness and be merry. These easy spice cake brownies are a new addition to my holiday baking list. This spice cake brownies recipe is ooey and gooey like a great brownie, and loaded with warm spices like ginger, cinnamon, cloves and nutmeg that smell like fall, Thanksgiving and Christmas.
To make this fall-inspired brownie recipe you will need to grab the following ingredients from your fridge, pantry and spice rack: butter, light brown sugar, eggs, molasses, vanilla extract, flour (all-purpose or gluten-free flour), ground ginger, ground cinnamon, ground cloves, ground nutmeg, salt and baking powder. These brownies are simple to mix together and bake up in about 30 minutes (ovens vary).
I like to slightly underbake my brownies so they stay gooey in the middle. Nothing better! Serve these spiced brownies for dessert after dinner, as a sweet snack during the day or make them as food gifts for the holidays. These moist homemade spice cake brownies would be a wonderful addition to your Thanksgiving dessert menu!

Ingredients
- 1 cup (2 sticks) butter, melted
- 1 1/2 cups light brown sugar, packed
- 2 large eggs
- 2 tablespoons molasses
- 2 teaspoons vanilla extract
- 2 1/2 cups flour (all-purpose or 1:1 gluten-free flour)
- 1 tablespoon ground ginger
- 2 teaspoons cinnamon
- 1/8 teaspoon ground cloves
- pinch of ground nutmeg
- 1/4 teaspoon salt
- 1 teaspoon baking powder
Here's how to make it:
- Whisk the melted butter and brown sugar together until smooth.
- Stir in the eggs, molasses and vanilla.
- In another mixing bowl, whisk together the flour, ginger, cloves, nutmeg, ground cinnamon, baking powder and salt. (For gluten-free brownies, use gluten-free flour.)
- Add the dry ingredients to the wet ingredients until combined.
- Spread the batter into a 9x9-inch square baking pan that's been lined with parchment paper. (You could sprinkle more baking spices over the top. Why not?)
- Bake in a preheated 350-degree F oven for about 30 minutes or until set. (You want the brownies still soft in the middle. Do not overbake!)
- Remove and cool completely.
- Cut into squares. (I cut mine into smaller squares because they are very rich.)
- Store the brownies in an airtight container to keep them fresh.
