Soup is on the menu often at my house, especially when the weather turns cooler. Taco soup recipes are one of my favorites. This creamy taco soup recipe is so quick and easy to make and loaded with healthy protein (check out the health benefits of protein). The easy Mexican-inspired soup recipe is in your soup bowl in less than 20 minutes.
To make the shortcut version of this high-protein recipe you only need five simple ingredients. Here is your short shopping list for this Tex-Mex recipe: ground beef or ground turkey, a packet of taco seasoning, low-sodium chicken broth, a can of fire-roasted tomatoes and cream cheese. For even more flavor, you can add an onion and fresh cilantro. (You know I added both of them.) The soup cooks up in less than 15 minutes.

Ingredients
- 1 pound ground beef or ground turkey
- 1 onion, chopped (optional)
- 1 ounce (1 packet) taco seasoning
- 32 ounces (1 box) low-sodium chicken broth
- 14 ounces (1 can) fire-roasted diced tomatoes
- 8 ounces cream cheese
- 1/4 cup fresh cilantro, chopped (optional)
Optional Toppings
- fresh cilantro
- grated cheddar cheese
- fresh avocado
- tortilla chips
- chopped red onion
- sliced fresh or pickled jalapenos
Here's how to make it:
- Put the ground beef and onion (if using) into a soup pot or dutch oven. Add the taco seasoning. Cook until meat is cooked through, about 5 minutes.
- Pour in the chicken broth.
- Add the can of undrained fire-roasted tomatoes. (You could use any flavor of diced tomatoes you like.)
- If using cilantro, toss it in.
- Add the cream cheese.
- Stir over medium heat until the cream cheese melts. Taste and add salt and black pepper, if desired. Cook until it thickens to desired consistency.
- Ladle into bowls and top with desired toppings. Store the soup in an airtight container in the fridge and reheat in the microwave.
