Going to be honest, when I'm flipping through a cookbook I usually skip the recipes that require you to make another dinner first, then use the leftovers. However, when I made this Family Chicken Mostaccioli Pasta recipe my thoughts changed a bit on that. We had so much leftover from the delicious pasta dinner that I had to find a way to reuse it for another meal. Enter this delicious family chicken pasta casserole recipe that's a take-two from the original meal.
The first thing you have to do is make the delicious Italian pasta recipe from Half Baked Harvest Super Simple by Tieghan Gerard. Unless you are feeding a very large family or have invited all the neighbors over, you will have leftovers from this pasta dinner. Those leftovers are going to turn into a delicious pasta casserole recipe with the addition of one ingredient: cheese. My husband actually enjoyed the recipe more as a casserole than a pasta and sauce. (Cheese can do that.)
Serve the cheesy pasta and chicken casserole for dinner with your favorite side dishes. I added a side of garlic green beans and a salad with copycat Wingstop ranch. Delicious meal and we didn't waste a drop of the leftovers.

Ingredients
- chicken mostaccioli pasta leftovers
- 1 - 2 cups grated mozzarella or Italian blend cheese
Here's how to make it:
- Choose the size of casserole dish based on how much pasta you have leftover. (I used an 11x7-inch baking dish. If you have a smaller amount, use a square baking dish, or whatever size works.) Spread the pasta, chicken and sauce into the bottom of the casserole dish. Pop it into a preheated 350-degree F oven. Bake for about 20 to 30 minutes, or until pasta is hot. (To speed up the process you could cover it with foil.)
- About 5 minutes before it's ready, sprinkle the top with the cheese.
- When the cheese is melted, the casserole is ready to be served. (Store any leftovers in an airtight container in the fridge, though because this is already leftovers, I wouldn't keep it too long.)
