Homemade meatballs, chicken Parmesan, pasta casseroles and spaghetti and meatballs are undeniably among the top comfort foods. So when I discovered a chicken Parmesan meatball casserole recipe, my mind went into overload – and I headed immediately to the store to buy the ingredients I was missing. These quick and easy chicken Parmesan meatballs floating in a sea of spaghetti sauce and covered with cheese are to die for. This is the perfect casserole for family dinners or when company is coming over.
To make this Italian-inspired meatball casserole recipe, you will need just a few simple ingredients. Here is your shopping list for this high-protein recipe: ground chicken, eggs, breadcrumbs, milk (but you can use water), garlic powder, onion powder, dried thyme, salt and pepper, mozzarella cheese, Parmesan cheese and spaghetti sauce. The meatballs are mixed up, rolled up and placed into a baking dish full of spaghetti sauce. Bake until done, cover with cheese, bake a few minutes more to melt, and you've got a winning casserole for dinner.
Freshly grated cheese melts better than pre-shredded cheese in a bag. So if you can, grate a block of mozzarella for this recipe. Fresh or dry breadcrumbs can be used for this recipe. I grated two slices of sandwich bread which is a perfect 1/2 cup. I used Rao's marinara sauce, but use whatever spaghetti sauce you enjoy.
Serve the meatballs and sauce over pasta or on top of crusty bread (garlic bread!) for an open-face meatball sandwich dinner. I served mine over angel hair pasta with an arugula salad on the side. Ingredients
- 1 pound ground chicken (or ground turkey)
- 1 egg
- 1/2 cup breadcrumbs
- 1/4 cup milk or water
- 1/ teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon dried thyme
- 1/2 teaspoon salt (or to taste)
- 1/4 teaspoon black pepper (or to taste)
- 1/4 cup grated Parmesan cheese, plus additional for topping
- 1 1/2 cups grated mozzarella cheese
- 24 ounces (1 jar) spaghetti sauce
Here's how to make it:
- Combine the ground chicken, egg, breadcrumbs, milk or water, garlic powder, onion powder, dried thyme, salt, black pepper and grated Parmesan in a mixing bowl.
- Mix well.
- Pour the spaghetti sauce into the bottom of a 13x9-inch baking pan. For some spice, add some crushed red pepper flakes, if desired.
- Form the chicken mixture into meatballs and place on top of the sauce.
- Bake in a preheated 400-degree F oven for 30 minutes.
- Remove the baking dish from the oven. Sprinkle with the mozzarella and additional Parmesan.
- Put the dish back into the oven until the cheese melts, about 2 to 3 minutes. (I sprinkled the top of the casserole with parsley flakes for some color.)
- Serve over pasta or hot bread.
