Here are the seven wholesome ingredients you need for this gluten-free sauce recipe: fresh parsley, green onions/scallions, feta cheese, plain Greek yogurt, extra virgin olive oil, fresh lemon juice and honey. All you do is blend the ingredients and serve it up however you like. Such a simple vegetarian recipe!
Serve this flavorful Mediterranean sauce as a salad dressing, bread spread, dip with fresh vegetables or crackers, or as a topping on just about any protein, vegetable or pasta. I served it as a dressing over a tomato and avocado salad as well as a sauce on top of some meatballs for dinner and it made everything taste so much better!

Ingredients
- 1 cup fresh parsley leaves (I used Italian flat-leaf parsley)
- 4 green onions (scallions)
- 4 ounces feta cheese, in chunks or crumbles
- 1 cup plain Greek yogurt
- 2 tablespoons extra virgin olive oil
- 2 1/2 tablespoons fresh lemon juice (the juice of about 1 medium lemon)
- 1 tablespoon honey
- salt and black pepper, to taste, if desired (optional, but I used about a 1/4 teaspoon of each)
Here's how to make it:
- To the bowl of a food processor or immersion blender, add the parsley and scallions. (I used Italian flat-leaf parsley.)
- Process until just shredded and combined, about 20 seconds.
- Add the feta cheese and process until just shredded and combined, about 20 seconds.
- In a medium mixing bowl, add the Greek yogurt, olive oil, lemon juice and honey. Season with salt and pepper, to taste, if desired. Whisk to blend. Taste to see if you'd like any more of any of the ingredients. (I prefer to use fresh-squeezed lemon juice, but in a pinch, you can use bottled lemon juice.)
- Add the feta/parsley mixture and stir to combine.
- Serve immediately, or refrigerate before serving. Garnish with fresh parsley, if desired. Store leftovers in an airtight container in the refrigerator.
