This easy, refreshingly light riced cauliflower recipe with garlic, lemon and parsley is the perfect side dish that's on the table in about 15 minutes.
To make this cauliflower recipe you will need just five simple, wholesome, gluten-free ingredients. Here is your short shopping list for this low-sugar, low-sodium vegetable side dish: a bag of frozen riced cauliflower (or you can use a fresh head of cauliflower you've riced), olive oil, fresh garlic (check out the health benefits of garlic), a lemon for juicing (check out the health benefits of lemons) and fresh parsley (check out the health benefits of parsley).

Ingredients
- 16 ounces (1 bag) frozen riced cauliflower (or 1 head cauliflower, riced)
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 1/2 cup flat-leaf parsley, finely chopped
- 1 lemon, juiced (about 1 tablespoon)
Here's how to make it:
- Heat the olive oil in a large skillet over medium heat. Add the garlic and cook about 30 seconds.
- Add the cauliflower and season with salt and black pepper, to taste. Cook, stirring often, until cauliflower begins to lightly brown, about 5 to 8 minutes.
- Stir in the parsley and lemon. Taste and add more salt and pepper, if needed. (Fresh is best when it comes to lemon juice, so use a fresh lemon if you can. Bottled would work in a pinch. Stir in some crushed red pepper flakes for a little spice.)
- Serve. Garnish with lemon zest and more fresh parsley, if desired. Store any leftovers in an airtight container and reheat in the microwave.
