Total Time: 50 minutes

Ingredients
Zucchini Fries
- 2 medium zucchinis
- 1 egg
- 1 cup Parmesan cheese, grated
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
Lemon Aioli Dipping Sauce
- 1/2 cup mayonnaise
- 1 lemon, juiced
- 1 garlic clove, minced
- 1 tablespoon finely chopped parsley
Here's how to make it:
- Wash your zucchini and slice the ends off. Slice the zucchini in half, then in half again and then into quarters to make the fries. You will get about 16 “fries” per zucchini (depending on the size).
- Make the lemon aioli dipping sauce by combining all the ingredients in a small bowl. Season with salt and black pepper, to taste. Refrigerate until ready to serve.
- Whisk the egg in a shallow bowl. In another bowl, stir together the Parmesan, garlic powder and Italian seasonings.
- Dip the zucchini fries into the egg and then into the Parmesan mixture. Place on a parchment paper-lined baking sheet. Continue until all the fries are prepped. Bake in a preheated 425-degree F oven for 30 minutes, turning them over halfway through the baking time.
- When the fries are finished, remove them from the oven and serve immediately with the aioli dipping sauce. If you have any fries leftover keep them in the fridge and reheat in the oven or air fryer on 400 degrees F for 5 to 6 minutes. Don’t use a microwave to reheat as the fries will be soggy!
