Potato salad is something often associated with summer because of cookouts, barbecues and potlucks. But we enjoy potato salad year-round at my house! This easy creamy red potato salad recipe is one of our favorites. With only eight simple ingredients, this potato salad takes centerstage all year long.
Dill pickle brine is my secret ingredient in this southern-style potato salad recipe. The sour pickle brine is drizzled over the potatoes while they are still hot, so they soak up all the flavor. Here is your short shopping list for this gluten-free recipe: baby red potatoes, dill pickle brine (from a jar of dill pickles), celery, red onion, green onions, mayonnaise, sour cream and garlic powder. Serve the potato salad as a side dish with whatever protein you're serving for dinner. We like it with barbecue meats, grilled chicken, hamburgers, hot dogs and even grilled steaks.

Ingredients
- 3 pounds small red potatoes
- 4 tablespoons dill pickle juice (from a jar of dill pickles)
- 3 stalks celery, finely chopped
- 1/4 cup red onion, finely chopped
- 3 green onions, finely chopped
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 teaspoon garlic powder
Here's how to make it:
- Cook the potatoes in boiling, salted water until tender, about 20 minutes. Drain and cut them in half. Put them into a large bowl. Pour the dill pickle juice over and toss. Add the celery, red onion and green onions. (If you really like pickles, add some chopped pickles to the potato salad. If you don't have dill pickles, use the brine from whatever kind you have. You could even use vinegar in a pinch.)
- In a small bowl, stir together the mayonnaise, sour cream and garlic powder. Season with salt and black pepper. Pour over the potatoes. Stir to combine. Taste and add more salt and pepper, if needed. Store the potato salad in an airtight container in the fridge.
