Riced cauliflower is a great stealth ingredient. Because it takes on the flavors of whatever you mix it with, some people may not even notice that they're eating cauliflower! This recipe includes olive oil, garlic and oregano – along with plenty of Parmesan cheese – so all you taste is delicious Italian flavor (not all that nutritious cauliflower). As an added bonus, Parmesan cheese packs a serious protein punch – 10 grams in a 1-ounce serving!
Here are the six gluten-free ingredients you need to make this simple, delicious pizza crust recipe: riced cauliflower, eggs, shredded Parmesan cheese, extra virgin olive oil, garlic powder and dried oregano. You mix up the ingredients, spread it into a baking pan then bake it until golden. So easy!
You can serve this nourishing cauliflower recipe as a satisfying lunch or as a fun dinner. It tastes great all on its own, but it's even better topped with cheese, veggies or your favorite proteins. Try some of the suggestions below at your next homemade pizza night!

Ingredients
- 24 ounces (1 package) frozen riced cauliflower
- 5 large eggs
- 2 tablespoons extra virgin olive oil
- 1 1/2 cups shredded Parmesan cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- salt and pepper, to taste, if desired (optional, but I used about a 1/3 teaspoon of each)
Suggested Toppings
- 1 cup pizza sauce or marinara sauce
- 1 cup shredded mozzarella cheese
- 1 cup fresh basil leaves
- 1 cup fresh mushrooms, sliced
- 1 cup fresh tomatoes, sliced
- 1 cup green peppers, sliced
- 1 cup pepperoni, salami or Canadian bacon, sliced
- olives, anchovies, crushed red pepper flakes, etc., to taste
Here's how to make it:
- In a medium microwave-safe bowl, add the frozen riced cauliflower. Microwave on high for about 3 minutes then stir. Microwave for another 3 minutes, or until cauliflower is heated through (stirring as needed). Drain and blot any liquid from the cauliflower.
- In a large mixing bowl, add eggs, olive oil, Parmesan cheese, garlic powder and oregano. Season with salt and pepper, to taste, if desired. Whisk to combine.
- Add in blotted cauliflower and stir to combine.
- Spread the mixture in a 13x9-inch sheet pan, baking pan or casserole dish that's been sprayed with cooking spray or lined with parchment paper, ensuring the mixture is distributed evenly across the pan.
- Bake in a preheated 425-degree F oven for about 25 to 30 minutes, or until golden brown. Allow to cool a bit before serving or before adding any toppings and baking briefly again to melt the cheese.
- Store any leftovers in an airtight container in the refrigerator or freezer. Reheat in the microwave or oven.
