I love a traditional caprese salad. This new twist on a great classic is a roasted salmon caprese recipe. This incredibly easy baked seafood recipe is ready in just 25 minutes, and comes out with little bites of mozzarella melted over the salmon filet, and the wonderful juicy tastes of roasted tomatoes and basil on top.
To make this high-protein recipe you will need the following gluten-free ingredients: extra-virgin olive oil, fresh garlic, cherry tomatoes, fresh mozzarella balls, fresh basil, salmon fillets and balsamic glaze. Finish this wonderful roasted salmon sheet pan recipe off with a store-bought balsamic glaze or make your own. You can make your own homemade balsamic glaze by simmering 1 cup of balsamic with 1/4 cup brown sugar on medium until it thickens. Make sure to stir often so the rich balsamic glaze doesn't stick.

Ingredients
- 1 1/2 teaspoons extra virgin olive oil
- 1 clove garlic, grated
- 2 cups cherry tomatoes, halved
- 4 salmon fillets (about 6 ounces each)
- 8 fresh mozzarella balls, halved
- 1/4 cup basil, thinly sliced
- 2 teaspoons balsamic glaze
Here's how to make it:
- Put the tomatoes into a bowl. Add the olive oil, garlic and a pinch of salt and black pepper, to taste, and toss gently to combine.
- Place your salmon filets on one side of a baking sheet lined with parchment paper. Sprinkle the filets with salt and pepper and top with four halves of the mozzarella pieces. Add the tomato mixture to the other side of the baking sheet.
- Bake in a preheated 425-degree F oven for 8 to 10 minutes, or until the salmon is cooked through. (The USDA recommends 145 degrees F internal temperature.)
- Serve salmon with the tomatoes on top. Sprinkle with basil and drizzle with balsamic glaze. Enjoy! Store any leftovers in an airtight container in the fridge.
