Trader Joe's is dangerous. If you have one close and love to cook, you know exactly what I'm talking about. My pantry, fridge and freezer are always full of new ingredients after a trip to that store. My latest discovery is their spinach and artichoke dip. Remembering a baked Caesar chicken breast recipe we enjoyed not too long ago, I decided to try that cooking method with the dip instead of salad dressing. The shortcut recipe was a winner, winner, Trader Joe's chicken dinner!
You only need two ingredients to make this easy baked chicken recipe. Here is your shopping list (if you can even call it that): boneless/skinless chicken breasts and a box of Trader Joe's Spinach & Artichoke Dip (in the freezer section). The chicken breasts are coated with the thawed dip on both sides, then baked for about 25 minutes (ovens vary) until cooked through, golden and juicy.
This quick weeknight baked chicken is delicious with a fresh vegetable and a salad. I served mine with haricot verts and a salad using the fresh lettuce from my garden. (Don't you love summer gardening?) This high-protein recipe will be on repeat! Read about the health benefits of protein.

Ingredients
- 4 skinless/boneless chicken breasts
- 8.82 ounces (1 box) Trader Joe's Spinach & Artichoke Dip, thawed
Here's how to make it:
- Season the chicken breasts with salt and black pepper. Place into a baking dish that's been sprayed with nonstick cooking spray or drizzled with olive oil. (You could use parchment paper for easier cleanup.) Rub the thawed dip all over the chicken breasts on both sides. (I only cooked two chicken breasts and used half of the container of dip.)
- Bake in a preheated 375-degree F oven for about 25 to 30 minutes, or until chicken is cooked through. (Chicken is cooked through at 165 degrees F internal temperature on a food thermometer.)
- Use a spatula to remove the chicken and serve immediately. Store any leftovers in an airtight container in the fridge.
