If you're looking for a savory salmon recipe that's super easy with very little cleanup involved, then this one's for you. This Mediterranean lemon and dill salmon recipe in parchment paper is so flavorful! Plus, it's a high-protein meal that's packed with nutrition.
Preparing salmon in parchment packets is incredibly easy, and the fish comes out so moist and tender. The parchment creates steam that infuses the lemon and dill straight into the salmon, making it incredibly delicious. After your meal, you simply toss out the parchment – making cleanup a cinch! To make this gluten-free seafood recipe, you'll need to gather the following ingredients: fresh salmon, fresh dill, fresh lemon, sea salt and black pepper. You place the salmon on the parchment, sprinkle it with salt and pepper, then layer the dill and lemon slices. Fold the parchment, creating a packet, then bake the salmon for only about 12 minutes or so. Very easy!

Ingredients
- 1 pound salmon filet
- 1 teaspoon sea salt (or to taste)
- 3/4 teaspoon black pepper (or to taste)
- 2 tablespoons fresh dill, chopped
- 1 large lemon, sliced in rounds
- additional fresh lemon slices, for garnish (optional)
Here's how to make it:
- Cut a piece of parchment paper into a large rectangle that measures about 18x16 inches or so. Lay the parchment into an 8x8-inch baking pan, with one side longer than the other (you'll be folding it over to enclose the salmon and make a packet). Place the salmon filet on top of the parchment. Season with sea salt and black pepper. Spread the dill on top of the salmon in an even layer.
- Arrange the fresh lemon slices evenly across the top.
- Wrap the longer half of the parchment paper over the salmon and fold the edges to seal the packet.
- Bake in a preheated 450-degree F oven for 10 to 12 minutes, or until your desired doneness. Salmon is done when it reaches 145 degrees F on a food thermometer. Open the packet carefully to avoid steam burns.
- Garnish with additional fresh lemon slices, if desired, and serve. Store leftovers in an airtight container in the refrigerator and reheat in the microwave.
