I’ve been trying a lot of chicken thigh recipes lately, and we really enjoyed these Dijon garlic chicken thighs. Chicken thighs are less expensive and more budget-friendly than breasts and stay wonderfully moist after cooking. The addition of the garlic Dijon sauce makes these juicy chicken thighs extra tasty.
To make this easy baked chicken recipe you need need simple ingredients. Here is your short shopping list: boneless/skinless chicken thighs, a yellow onion, Dijon mustard, honey, extra-virgin olive oil, fresh garlic, ground coriander, ground paprika, black pepper and optional ground cayenne for a little kick of heat.

Ingredients
Chicken
- 1 1/2 pounds boneless, skinless chicken thighs
- 1 large yellow onion, cut in half and sliced into small wedges
Garlic Dijon Sauce
- 3 teaspoons Dijon mustard
- 2 teaspoons honey
- 1/4 cup extra virgin olive oil
- 6 garlic cloves, minced
- 1 teaspoon ground coriander
- 3/4 teaspoon paprika
- 1/2 teaspoon black pepper
- 1/2 teaspoon cayenne pepper (optional)
Here's how to make it:
- Season your chicken on both sides with salt and pepper and set to the side Make the Dijon sauce by combining all the sauce ingredients in a large bowl. Mix with a fork or whisk. If you don't like Dijon mustard, try whole-grain mustard.
- Place the chicken in the sauce and toss to coat it thoroughly (tongs work great for this). You could use boneless chicken breasts. If you use bone-in chicken, you will need to increase cooking time.
- Put the chicken into a lightly oiled baking pan, adding any remaining sauce to the top of the chicken.
- Set the onions into the chicken pieces. If you don't like onions, simply omit them.
- Bake in a preheated 425-degree F oven for about 25 minutes, or until the chicken has an internal temperature of 165 degrees F on a food thermometer.
- Garnish with parsley, if desired, and serve.
