Curry is my new favorite seasoning, and crispy oven-baked chicken is one of my favorite dinners. I combined those two favorites into one – and it was another winner winner high-protein chicken dinner!
These juicy bone-in chicken thighs are coated in flour, curry powder and smoked paprika before being baked until golden and crispy. Yes, you only need four ingredients to make this chicken dinner for your family, plus some nonstick cooking spray.
Here is your shopping list for this high-protein recipe: bone-in chicken thighs, flour, curry powder (check out the health benefits of curry powder), smoked paprika and nonstick cooking spray. The cooking oil spray (I used olive oil cooking spray) moistens the flour and helps create the crispy golden skin.
Serve these crunchy Middle Eastern-inspired chicken thighs for a high-protein dinner with your favorite side dishes. I served this high-protein dinner with cafeteria-style eggplant casserole and fresh kale straight from the farmers market.

Ingredients
- 4 - 6 bone-in chicken thighs
- 1/3 cup flour (you can use gluten-free flour)
- 1 - 2 teaspoons curry powder
- 1 - 2 teaspoons smoked paprika
Here's how to make it:
- Put the flour, curry powder and smoked paprika onto a plate or into a shallow bowl.
- Season the chicken with salt and pepper.
- Dredge in the seasoned flour and put into an oiled baking dish. I used my Le Creuset 13x9-inch dish, but any baking dish will work. Cast iron would be a great choice. I oiled my baking dish with olive oil. Spray the top of the chicken with cooking oil spray.
- Bake in a preheated 375-degree F oven for about 40 minutes, or until chicken is cooked through and skin is golden and crispy. Ovens vary so you can check the doneness of the chicken with a meat thermometer. The chicken is done at 165 degrees F internal temperature.
