Steph Curry is one of professional basketball's biggest stars, a multiple Olympic medal winner, husband and father of four – and he also cooks! This quick and easy pasta recipe with pancetta and peppers is inspired by Steph's favorite weeknight dinner when things get busy.
To make this five-ingredient recipe you need to grab the following ingredients from your pantry and fridge: pasta (whatever kind of pasta you like), sweet bell peppers, pancetta, Parmesan cheese and extra-virgin olive oil. Pancetta is an Italian favorite that's a salt-cured pork belly that's similar to bacon. Unlike bacon, pancetta is not smoked and has a richer pork flavor.
Not only is this Italian-inspired recipe quick to make, but you also get the health benefits of bell peppers in every bite! Serve this easy pasta dish with your favorite side dishes for a quick meal everyone will dig into. It's like getting a three pointer!

Ingredients
- 16 ounces pasta (I like egg noodles)
- 2 sweet bell peppers (red, orange, yellow or a combination), cut into bite-sized pieces
- 4 ounces pancetta, diced
- 1 cup Parmesan, grated
- 2 tablespoons extra virgin olive oil
Optional Ingredients
- crushed red pepper flakes
- fresh basil
Here's how to make it:
- Place a large pot of salted water on the stove on high and bring to a boil. Cook pasta to al dente. Save 1 cup of the pasta water, then drain and return pasta to the pot. Use whatever kind of pasta you like. Rotini, fusilli, penne, fettucine or egg noodles are great options.
- Add the Parmesan cheese to the pasta and stir. If you can, grate the Parmesan cheese fresh.
- Place a medium skillet on the stove over medium-high heat. Add the pancetta. Cook the pancetta for about 4 minutes, or until it is beginning to brown. Reduce heat to medium.
- Add the peppers to the pancetta and continue to sauté for another 4 to 5 minutes, or until the pancetta is browned and peppers are softened.
- Pour the pancetta and peppers onto the cooked pasta. Add 1/2 cup pasta water, olive oil and optional crushed red pepper flakes and stir. Taste to see if more water, Parmesan or crushed red pepper flakes are needed.
- Serve in large bowls topped with a bit more Parmesan and basil, if desired. Store any leftovers in an airtight container in the fridge.
