My dad doesn't get too excited for desserts (except his daily milkshakes). When I took Dolly Parton's cuppa cuppa cake to my parent's house a few weeks ago, he actually said he really liked it, especially the peaches in the fruit cocktail. So when I made this cake recipe again for him, I changed it up and only used peaches. The simple three-ingredient cake is super moist and is like summer on a plate in the middle of winter.
To make this super moist southern cake, you only need three ingredients. Here is your short shopping list: granulated sugar, self-rising flour and a can of sliced peaches. The ingredients are stirred together, spread into a square baking pan and baked for about 30 minutes. Quick and easy!
This cake is wonderful served at room temperature or warm. I served it at room temperature with whipped cream. My mom requested it served warm next time with vanilla ice cream.
This shortcut cake is so easy, you can mix it up and let it bake while you're eating dinner. Serve it for dessert with whipped cream, ice cream or as is. But this peach cake recipe is so moist, it can stand on its own.

Ingredients
- 1 cup granulated sugar
- 1 cup self-rising flour
- 15 ounces (1 can) sliced peaches (do not drain)
Recipe Notes
- Don't put the peaches onto a cutting board to cut into pieces. You need the liquid in the can of peaches for the batter, so be sure to pour the contents directly into your mixing bowl.
- You could buy another can of peaches and use them as garnish when serving.
- If you love cinnamon, sprinkle some ground cinnamon into the batter and/or on top before baking.
- I used peaches in heavy syrup. If you want a less sweet cake, use peaches in their natural juice.
- Store the cake in an airtight container to keep it fresh.

- Put all the ingredients into a mixing bowl. Use kitchen shears to cut up the peaches.
- Stir to combine.
- Spread into a buttered 8x8-inch baking dish or cake pan.
- Bake in a preheated 350-degree F oven for about 30 minutes.
