I’m always on the lookout for easy meals. If the recipes are vegetarian, that’s just a plus. This super easy spinach zucchini casserole recipe assembles in just minutes, and is warm, filling and also budget friendly! We ate this vegetable casserole as a main dish, but it’s also a great side dish with a simple protein and grain.
To make this vegetarian casserole you will need just five simple ingredients, plus a little salt and black pepper for seasoning. Here is your short shopping list: fresh zucchini (check out the health benefits of zucchini), baby spinach (check out the health benefits of spinach), cheddar cheese, milk and flour.
This cheesy zucchini and spinach casserole is a wonderful lunch or dinner. We enjoy it with a hunk of delicious sourdough bread on the side.

Ingredients
- 2 cups zucchini, sliced
- 6 ounces baby spinach, de-stemmed and chopped
- 1 cup cheddar cheese, shredded (divided)
- 1 cup milk
- 2 tablespoons flour (all-purpose flour or gluten-free flour)
Recipe Notes
- If you don’t have fresh spinach you can use two boxes of frozen spinach, defrosted, drained and patted very dry.
- You can use any cheese you like in place of cheddar cheese.
- I used gluten-free flour and it was delicious!
- For some spice, add crushed red pepper flakes.
Here's how to make it:
- Whisk together the flour and milk in a mixing bowl. Season with salt and black pepper (I used about 1 teaspoon salt and 1/2 teaspoon black pepper.)
- Place the zucchini, spinach and half the cheese into an 8x8-inch or similar size baking dish. Toss to combine. Pour the milk mixture over the vegetables.
- Top with the remaining cheese.
- Bake in a preheated 375-degree F oven for 30 minutes, or until the casserole is golden brown and bubbling. Remove and cool for 5 minutes before serving. Enjoy!
