If there's one side dish my family looks forward to every holiday season, it's stuffing. I think if my kids had their way, our family's easy sausage stuffing recipe would be the main course – not the side dish. As far as side dish recipes go, this one is their absolute favorite. Lucky for me, it's an easy shortcut recipe, so I can make it any time they ask me to – not just during the holidays!
This simple shortcut sausage stuffing recipe is so easy to make and so delicious that I end up making it all year round. It makes a great high-protein side dish for anything from roasted chicken to our favorite baked salmon. And, because it uses a box of stuffing mix (that's the shortcut), it comes together quickly.
To make this savory stuffing recipe, here's what you need to gather: celery (check out the health benefits of celery), onions, bell pepper (check out the health benefits of bell peppers), a roll of pork sausage, your favorite stuffing mix and chicken broth. The savory stuffing is ready to serve in only about 50 minutes.

Ingredients
- 10 ounces (1 package) seasoned herb stuffing mix
- 1 cup onions, diced
- 1 cup orange bell peppers, diced
- 2 cups celery, diced
- 16 ounces (1 roll) pork sausage
- 2 cups chicken broth
Recipe Notes
- I used a 10-ounce package of stuffing mix that included an herb seasoning packet. You can choose your favorite seasoned stuffing mix, or use an unseasoned one then add your own seasonings.
- You can use regular or gluten-free stuffing.
- To reduce sodium, use low-sodium broth.
- I used an orange bell pepper, but you can use any color bell pepper you prefer. You also could use carrots instead of peppers.
- Garnish with fresh herbs like parsley, sage or dill, if you like.
- Store leftovers in an airtight container in the refrigerator and reheat in the microwave.
Here's how to make it:
- In a large pot over medium heat, add the onions, peppers and celery. Season with sea salt and black pepper, to taste, if desired. Stir to combine.
- Add the sausage and break it apart until it's mixed in with the vegetables. Cook, stirring, until vegetables are crisp-tender and sausage is cooked through.
- Add the chicken broth and the herb seasoning packet. Stir to combine and bring to a low boil. Add the stuffing cubes and gently fold them in until everything is moistened.
- Spread the mixture into a 13x9-inch baking pan or casserole dish that's been sprayed with cooking spray. Cover pan with aluminum foil. Bake in a preheated 350-degree F oven for 20 minutes or until cooked through.
- To get the top crispy, remove the foil and bake uncovered for an additional 10 minutes. Serve immediately and garnish with fresh herbs, if desired.
