Ingredients
- 2 tablespoons extra virgin olive oil
- 2 medium sweet potatoes (about 2 1/2 cups), peeled and diced
- 1 cup onion, diced
- 1 cup red bell pepper, diced
- 1 pound ground chicken
- 3 teaspoons taco seasoning
- 3 ounces fresh baby spinach
Recipe Notes
- I used red bell pepper, but you can use any color bell pepper you prefer.
- You can use store-bought taco seasoning or make your own taco seasoning.
- You could add a fresh parsley garnish, if you like.
- Store leftovers in an airtight container in the refrigerator and reheat in the microwave.
Here's how to make it:
- In a large skillet or pan with sides over medium heat, add the olive oil and sweet potatoes. Stir to combine and sauté for a couple of minutes.
- Add the onions and peppers. Stir to combine and sauté for a couple of minutes.
- Add the ground chicken. Break it up and sauté with the vegetables until it's browned and cooked through and sweet potatoes are tender.
- Add the taco seasoning and stir to combine. Season with sea salt and black pepper, to taste, if desired.
- Add the spinach and sauté until wilted, about 1 minute. Remove from heat.
- Garnish with fresh parsley, if desired, and serve.
