Nothing adds crunch to a salad better than homemade croutons. I've made croutons with all sorts of bread – from Italian to French to sourdough to brioche to cornbread to biscuits to plain white sandwich bread. Each bread gives its own unique flavor and texture to the croutons. When two bolillo rolls that I had bought make sandwiches with got a little too stale for that, I decided to use them for croutons. Wow! You need to try this quick and easy bolillo crouton recipe. So tasty!
A bolillo is a savory bread from Mexican and Central America that's often used for tortas (a Mexican sandwich). The rolls have a crusty exterior and a soft interior, similar to a baguette, with a slightly sweet, buttery flavor. And now we know they make a delicious crouton.
To make these baked croutons you will need bolillo rolls and olive oil. You can also sprinkle on a seasoning to add even more flavor. I tend to like my croutons with just black pepper so the salad dressing shines and is not overpowered, but you could use any seasoning you like. The croutons bake up in about five to eight minutes in the oven.
Use these croutons to dress up your garden salads or even in Caesar salads. The croutons would also be amazing floating on a sea of tomato soup or other pureed vegetable soups (think split pea soup). Sometimes I'll just grab some croutons and dip them in pesto or salad dressing for a quick, savory snack. How will you use them?

Ingredients
- 2 bolillo rolls, cut into crouton-size pieces
- olive oil
- seasoning, to taste (optional)
Recipe Notes
- The baking time will vary according to how many croutons you are preparing and your oven (ovens vary). Be sure to watch them closely, as they can burn very quickly.
- If adding seasonings, sprinkle it on after drizzling the olive oil. You could use Italian seasoning, Mexican seasoning, Greek seasoning, Mediterranean seasoning, seasoned salt or your favorite seasoning blend.
- For easier cleanup, cover the baking sheet with parchment paper or aluminum foil.
- Store the croutons in an airtight container or plastic food storage bag.
Here's how to make it:
- Put the bolillo pieces onto a baking sheet. Drizzle with olive oil and toss. Add seasonings, if using.
- Bake in a preheated 400-degree F oven for about 5 to 8 minutes, or until croutons are dried out and golden. You can stir, if desired, halfway through the cooking time.
- Use immediately on your salads or put into an airtight container until ready to use.
