When I'm looking for easy dinner ideas, I often reach for my cast iron skillet. I love making casserole recipes in my oven-proof pan because putting the skillet in the oven results in some seriously delicious meals. This cheesy zucchini casserole recipe with ground chicken is my latest find and, wow, it's yummy.
This creamy skillet casserole recipe is packed with protein, thanks to the ground chicken, Greek yogurt and cheese. Check out the health benefits of Greek yogurt. Here's your easy shopping list for this one-pan dinner recipe: low-fat plain Greek yogurt, shredded mozzarella cheese, shredded Parmesan cheese, extra virgin olive oil, onion, bell pepper, zucchini, minced garlic and ground chicken. You combine the ingredients in the skillet on the stovetop then bake until it's cooked through and golden.
I served this hearty meal for dinner over rice, but it would be equally delicious over pasta or all on its own. Simple and delicious!

Ingredients
- 1 cup low-fat plain Greek yogurt
- 1 cup shredded mozzarella cheese
- 1 cup shredded Parmesan cheese
- 1 1/2 tablespoons extra virgin olive oil
- 1 cup onion, diced
- 1 cup orange bell pepper, diced
- 1 1/2 cups zucchini, diced
- 2 teaspoons minced garlic
- 1 pound ground chicken
Recipe Notes
- I used orange bell pepper, but you can use any color bell pepper you prefer.
- I used mozzarella cheese, but you could substitute cheddar, if desired.
- I peeled my zucchini, but unpeeled is fine, too.
- You could add a fresh parsley garnish, if desired, but that's optional.
- Store any leftovers in an airtight container in the refrigerator and reheat in the microwave.
Here's how to make it:
- In a large mixing bowl, add the Greek yogurt, mozzarella cheese and Parmesan cheese. Season with sea salt and black pepper, to taste, if desired. Stir to combine.
- In a cast iron skillet over medium heat, add the olive oil, onions, peppers, zucchini and garlic. Stir to combine.
- Add the ground chicken. Break it up and sauté with the vegetables until it's browned and cooked through. Remove from heat. Drain any excess liquid.
- Add the creamy cheese mixture to the skillet and stir until thoroughly combined.
- Bake at 425 degrees F for 15 to 20 minutes, or until cooked through and golden brown. Remove from the oven and allow to rest for a few minutes before serving. Garnish with fresh parsley, if desired.
