Easy German Bacon Fried Potatoes Recipe for Oktoberfest or Anytime (4 Ingredients) by Elisa Schmitz

It's Oktoberfest season! That means German potatoes and, even better, German potatoes with bacon. Known as Bratkartoffeln in German, these easy bacon fried potatoes are usually cooked with onion. I added some red pepper for nutrition and a parsley garnish for color. Although potatoes fried in bacon grease aren't the healthiest dish, they are delicious and just perfect for any Oktoberfest celebration (even if it's just for family at home).
You only need four simple ingredients to make these gluten-free German potatoes: bacon, potatoes, onion and red pepper (check out the health benefits of red peppers). The fresh parsley garnish is optional. You fry the bacon, then cook the onions, peppers and potatoes in the bacon grease. Then you top the potatoes with the bacon. Yes, these tasty potatoes are a bacon lover's dream come true (and ready in just about half an hour)!
Serve these crispy German potatoes during this festive Oktoberfest season, or for dinner any time you're craving some satisfying comfort food. I served them with my high-protein bacon and egg casserole for an easy, delicious meal that would make any bacon lover jump for joy!

Ingredients
- 1/2 pound thick-sliced bacon, cut into 1-inch pieces
- 1 medium onion (about 3/4 cup), diced
- 1 medium red pepper (about 3/4 cup), diced
- 2 pounds marble potatoes, cut in half or in quarters so they're uniform in size
- fresh parsley, for garnish (optional)
Recipe Notes
- I used marble potatoes, but you could use fingerlings, Yukon gold, new potatoes or red potatoes.
- I used red bell pepper, but you could use any color bell pepper you prefer (or leave it out).
- I added a fresh parsley garnish, but that's optional.
- Store leftovers in a container in the refrigerator and reheat in the microwave or oven.
Here's how to make it:
- Cook the bacon in a skillet until crisp, about 10 minutes. Remove bacon to a paper-towel-lined plate, leaving bacon grease in the pan.
- Add the onions, peppers and potatoes to the pan. Season with salt and pepper, to taste, if desired.
- Sauté until cooked through, browned and crispy, about 10 to 15 minutes.
- Transfer potato mixture to a large mixing bowl. Add the bacon to the mixture and toss to combine.
- Garnish with fresh parsley, if desired, and serve.
