This savory, easy, cheesy cauliflower casserole recipe was such a hit for breakfast this morning. Yes, breakfast! This vegetable casserole recipe, which also can be made as muffins, is so tasty and full of nutrition and fiber, and a wonderful hearty meal for breakfast, brunch, an easy lunch or a vegetarian dinner.
The vegetarian casserole comes together in just one bowl and can easily be made ahead of time and reheated. To make this cheesy cauliflower casserole you will need to grab the following list of ingredients: fresh cauliflower, shallots, carrots, bell peppers, eggs, dried Italian seasoning, paprika, garlic powder, salt, Parmesan cheese, breadcrumbs (see Recipe Notes for gluten-free alternative), mozzarella cheese and sharp cheddar cheese.

Ingredients
- 3 cups finely chopped cauliflower (1 small head or cauliflower rice)
- 1 medium shallot, finely chopped
- 1 carrot, coarsely grated
- 1 large bell pepper, finely chopped
- 6 eggs, lightly beaten
- 1 teaspoon Italian herb seasoning
- 1/2 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon salt (or to taste)
- 1/3 cup grated Parmesan cheese.
- 1 cup breadcrumbs
- 1/2 cup shredded mozzarella
- 1/2 cup shredded sharp cheddar
Recipe Notes
- You could use almond flour instead of breadcrumbs for a gluten-free casserole.
- Use whatever cheese you like! Gruyere, mozzarella, provolone, fontina, Swiss, mild cheddar or your favorite cheese blend will work beautifully.
- Store any leftovers in an airtight container in the fridge for up to four days.
Here's how to make it:
- Combine cauliflower, shallot, carrot, bell pepper and eggs in a medium bowl. Gently stir to mix together.
- Add salt, garlic powder and paprika, Parmesan and breadcrumbs. Mix well. Stir in the mozzarella and cheddar.
- Spread the mixture into a 11x9-inch baking dish that's been sprayed with nonstick cooking spray.
- Bake in a preheated 400-degree F oven for about 25 minutes, or until it is browned on top.
- Remove and let it rest for 10 minutes. Serve warm and enjoy!
