Ingredients
- 15 ounces (1 can) black beans, rinsed and drained
- 15 ounces (1 can) whole kernel corn, rinsed and drained
- 1 tomato, chopped
- 1 avocado, peeled, pitted and chopped
- 2 cloves garlic, minced
- 2 tablespoons lime juice
- 1 tablespoon vegetable oil
- 1/2 teaspoon ground cumin
- salt and black pepper, to taste
Recipe Notes
- You could add fresh chopped red onion, fresh cilantro and fresh chopped jalapeno.
- Instead of vegetable oil, you would use olive oil, though it does have a stronger taste. A neutral oil works best.
- Store the leftovers in an airtight container for up to two days.
Here's how to make it:
- Put the black beans, corn, tomato, avocado and garlic into a mixing bowl. Toss to combine.
- In a small bowl, stir together the lime juice, oil, cumin, salt and black pepper. Stir to combine. Drizzle over the vegetables. Taste and add more lime juice, salt, pepper or cumin, if needed.
- Serve immediately or refrigerate until ready to serve.
