My normal breakfast of yogurt or cottage cheese with fruit, granola and nuts is just so easy to throw together after my workout at the gym. But everyone needs a change of pace every once in a while. So, when I saw this summer strawberry baked oatmeal recipe on TwoPeasAndTheirPod.com, I knew I had to give it a try.
Once the strawberry oatmeal was baked, I sliced a square and it made the perfect breakfast or brunch. And this strawberry baked oatmeal was just as filling as a bowl of oatmeal. However, I can keep a pan of it in the fridge and it's ready to eat for six days straight.
To make this fresh strawberry baked oatmeal recipe you will need the following ingredients: old-fashioned rolled oats, baking powder, salt, fresh strawberries, milk, butter, eggs, maple syrup and vanilla extract.
If you add a drizzle of maple of syrup or honey and a scoop of ice cream, this tasty baked oatmeal could also be dessert!

Ingredients
- 2 cups old-fashioned oats
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 cups chopped fresh strawberries (divided)
- 1 1/2 cups milk
- 1/4 cup unsalted butter, melted
- 2 large eggs
- 1/4 cup maple syrup
- 1 1/2 teaspoons vanilla extract
Recipe Notes
- You can use any kind of milk, including nut milks. I used leftover heavy cream and whole milk.
- We had a small bottle of vanilla-infused maple syrup in the fridge, which had been a gift. I subbed that for the regular maple syrup, and it was a great choice!
- I added a dollop of yogurt and a sprinkle of nuts on top.
- Next time, I’ll add nuts to the batter.
Here’s how to make it:
- Combine the oats, baking powder and salt in a large bowl.
- In a blender, mini chopper or food processor, blend 1 cup of the strawberries and the milk until smooth. The result will be a strawberry milk.
- Pour the strawberry milk over the oat mixture and stir.
- In a separate bowl, mix the melted butter, eggs, maple syrup and vanilla extract.
- Add these wet ingredients to the oat mixture and stir until well combined.
- Fold in the remaining 1 cup of chopped strawberries.
- Prepare an 8x8-inch pan with nonstick cooking spray. Spoon the mixture into the pan and top with sliced strawberries.
- In a preheated 350-degree F oven, bake for 45 minutes or until lightly browned.
- Remove from the oven and let cool in the pan for 5 minutes. Cut into squares and serve.
