Easy Caramelized Eggplant Recipe Should Be In Your Recipe Box by 30Seconds Food

To make this simple roasted caramelized eggplant you will need an eggplant, olive oil, salt and black pepper. That's it! The eggplant is tossed in the olive oil and seasonings, then roasted until tender and golden.

Ingredients

• 1 medium eggplant, cut into 1/2- to 1-inch cubes (about 4 cups)
• 2 tablespoons olive oil
• sea salt and black pepper, to taste

Recipe Notes

• You could add other seasonings like dried Italian seasoning, Indian spices, Mediterranean seasoning or your favorite spice blend.

• You do not have to peel the eggplant. But you could use a vegetable peeler to remove the skin, if desired. 

• Store the eggplant in an airtight container in the fridge for up to five days.

Here's how to make it: 

1. Put the eggplant cubes onto a parchment paper-lined baking sheet. Drizzle with the olive oil and toss to coat. Sprinkle with salt and black pepper. Put the eggplant in a single layer. 
2. Bake in a preheated 425-degree F oven for about 25 to 30 minutes, or until tender and lightly browned. Stir the eggplant halfway through cooking time.
