When I want to start a description of a recipe with WOW, it’s definitely a winner. This amazingly easy chocolate cashew candy recipe has just two ingredients and is so so good. Remember too, that dark chocolate (with a high concentration of cocoa), in moderation, has some lovely health benefits including antioxidants that can help with brain function, lowering blood pressure and fighting disease. This chocolate cashew candy recipe hits the spot. They are little crunchy bites of nuts and chocolate that take just a few minutes to put together and sit in your fridge for those times you just need a a bite of chocolaty goodness in your day.

To make this chocolate candy recipe for yourself or friends and family you will need unsalted, roasted cashews, dark chocolate and optional flaky sea salt. Ingredients

• 1 cup unsalted roasted cashews

• 8 ounces dark chocolate (70% or higher), chopped

• pinch of flaky sea salt
(optional)

Here's how to make it: 

1. Line a 24-cup mini muffin tin with baking liners. If you don’t have a mini muffin pan place 24 liners on a cookie sheet. Add 4 to 5 cashews to each liner. (I didn't have mini baking liners so I cut regular holders down in half.)
   
2. In a medium glass or other microwave-safe bowl, place the chocolate and melt in the microwave for three 30-second intervals, stirring in between until fully melted. (I used dark melting chocolate, 72 percent, from a bag.)
   
3. Use a spoon and drizzle the melted chocolate over the nuts. Sprinkle with the flaked sea salt.
   
4. Place in the refrigerator for at least 30 minutes, or until the chocolate is set. Store the candy in a refrigerator for up to two weeks. But if it’s like my house they won’t last that long!
