Black rice, also called purple rice and forbidden rice, is a healthy and delicious alternative to plain white rice. The rice is thought to have originated in China and other areas of Asia.

  • Instead of water, use vegetable broth, chicken broth or beef broth.
  • Add a squirt of fresh lemon to the cooked rice for a little brightness.
  • You an add salt to the water with the rice, if you like.
  • Store the rice in an airtight container in the fridge.

Here's how to make it: 

  • Combine the rice, olive oil and water in a saucepot. Bring to a boil, reduce heat to low, cover and simmer for about 30 minutes.
  • Remove the pot from the heat and let it sit, covered, for about 10 minutes. Fluff and serve.
