If you're a ham and cheese lover like me, then you will love this tasty ham and cheddar egg scramble recipe. Savory chunks of ham are nestled into fluffy, flavorful eggs then crowned with a layer of cheddar cheese that will make you go YUM!

This gluten-free egg dish is extra tasty – thanks to the addition of garlic powder and oregano. Plus, the eggs are cooked in extra virgin olive oil, which is part of a heart-healthy Mediterranean diet that promotes health and longevity.

Here's how to make it:

  1. Crack the eggs into a large mixing bowl. Add the oregano and garlic powder, and season with salt and pepper, if desired. Whisk until blended.
  2. Add the olive oil to a nonstick skillet over medium heat. Add the ham to the skillet and sauté until heated through, about 2 minutes.
  3. Pour in the egg mixture. Using a wooden spoon or spatula, scramble the eggs until they are done to your preference, about 3 minutes. Turn off the heat.
  4. Spread the shredded cheddar cheese over the eggs then cover the pan. Allow to rest until cheese has melted, about 2 minutes.
  5. Serve eggs on their own, or on top of a bagel, English muffin or toast as an egg sandwich.
