These gluten-free Boursin cheese mashed potatoes are so simple to prepare. They are the perfect side dish for Monday night dinner, but fancy enough for dinner guests on the weekend. To make these creamy cheese, herb and garlic potatoes you will need Yukon gold potatoes, broth, Boursin garlic and herb cheese spread, fresh chives and butter. The potato side dish is ready in about 25 minutes from start to finish.
Pile these creamy potatoes into a bowl, top with butter and fresh chives, and get ready to enjoy every mouthful. Serve these creamy mashed potatoes as a side dish with chicken, pork, turkey, ham, beef, lamb, barbecued meats, kebabs or whatever you enjoy dining on. You can't go wrong!

Ingredients
- 2 - 2 1/2 pounds Yukon gold potatoes, washed and cut into chunks
- 3/4 cup broth (vegetable broth or chicken broth)
- 5 ounces Boursin garlic and herb cheese
- 2 tablespoons fresh chopped chives
Here's how to make it:
- Cook the potatoes in boiling, salted water until tender, about 15 minutes. Drain well and put them back into the pot. Red, white or russet potatoes could be substituted for the Yukon gold. Yukon gold are preferred because of their buttery taste. If you prefer to peel your potatoes, do it!
- Add the broth. Use a potato masher to mash the potatoes and broth together until smooth. If you want these potatoes to be vegetarian, use vegetable broth instead of chicken broth.
- Stir in the Boursin cheese until melted and thoroughly combined. Season to taste with salt and black pepper.
- Put the potatoes into a serving bowl and top with the chives. Add a pat or two of butter, if desired. You can use chopped green onion tops instead of chives, or a combination of both. Store the potatoes in an airtight container in the fridge. Reheat in the microwave.
