At a recent dinner, these savory five-ingredient Mediterranean roasted potatoes were a huge hit with my family. Some family members ate them plain while others enjoyed dipping them, french-fry-style, into their favorite dipping sauces (yep, even ketchup).
To make these low-sodium potatoes wedges, you will need these five simple ingredients: potatoes, olive oil, garlic powder, paprika and oregano. You coat the potatoes in the Mediterranean spice mixture then roast them until they're golden brown. So simple!
Serve these gluten-free potatoes as a side dish with your favorite dinner recipes. Or, serve them as an appetizer or snack with your favorite dipping sauces. I served them with ham and vegetables for an easy meal that everyone loved.

- 1 1/2 pounds small potatoes (such as fingerlings, Yukon gold, marble potatoes), cut in half
- 2 tablespoons extra virgin olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1 teaspoon oregano

Recipe Notes
- You can add more or less garlic powder, depending on how much garlic flavor you want.
- Season with salt and pepper, if desired.
- I used fingerling potatoes, but this would work well with small Yukon gold, marble or red potatoes, too.
- Store leftovers in a container in the refrigerator and reheat in the oven for maximum crispiness.
Here's how to make it:
- In a mixing bowl, add the olive oil, garlic powder, paprika and oregano. Stir to blend.
- Put the sliced potatoes into the mixing bowl and toss until potatoes are coated in the mixture. Season with salt and pepper, to taste, if desired.
- Pour the coated potatoes into a 13x9-inch baking pan or casserole dish, ensuring they are evenly distributed.
- Bake in a preheated 400-degree F oven for about 60 minutes, stirring once or twice during baking to ensure even browning, until golden. Remove from oven and serve as a side dish or as an appetizer with your favorite dipping sauces.
