This low-carb, gluten-free taco soup is keto-friendly and the perfect dinner for busy nights. You don't need a lot of ingredients to make this soup recipe either. Here is your easy shopping list: ground beef, pork, turkey or sausage, onion, cream cheese, tomatoes with green chiles, adobo or taco seasoning, ancho chili powder, chicken broth, fresh cilantro and optional shredded cheese.

Ingredients
- 2 pounds ground pork, beef, turkey or sausage
- 1 small onion, chopped (optional)
- 16 ounces cream cheese
- 20 ounces (2 cans) tomatoes with green chiles
- 1 tablespoon adobo seasoning or taco seasoning
- 2 teaspoons ancho chili powder
- 4 cups chicken broth
- 1 - 2 tablespoons fresh chopped cilantro (optional)
- 1/2 cup shredded cheese (optional)
Recipe Notes
- You can use low-fat cream cheese.
- If you don’t have canned tomatoes with green chiles (Rotel), substitute regular canned chopped tomatoes with or without chilis and Italian seasonings.
- To reduce the sodium in this soup, use low-sodium chicken broth and low- or no-salt taco seasoning.
- Store the soup in an airtight container in the fridge.
Here's how to make it:
- Place a large skillet on the stovetop on medium heat. Add the meat, onion, if using, and half of the seasoning. Cook the meat thoroughly, until browned and onion is soft. While the meat browns, place the cream cheese, canned tomatoes and the other half of your seasonings in the slow cooker.
- When the meat is done drain the excess fat and place into the slow cooker with the tomato mixture. Gently mix and then add chicken broth. Cover and cook on low for 4 hours or high for 2 hours..
- When finished cooking, stir in cilantro, if desired. Serve warm topped with grated cheese and with corn chips or a warm roll.
