Snoop Dogg is not only an acclaimed rapper and face of the Olympics, but he's also well versed in the kitchen. I read an article about Snoop where he shared his favorite mashed potato recipe. Is it any surprise that his secret ingredient is cognac? The spirited vegetarian mashed potato recipe is also in his cookbook, Goon With the Spoon.
To make these creamy gluten-free mashed potatoes you will need russet potatoes, cognac or brandy, butter (Snoop uses unsalted butter), heavy cream, mayonnaise, kosher salt and cracked black pepper. Don't worry, the alcohol cooks out so you won't need a designated driver.
Serve these creamy cognac mashed potatoes as a side dish with dinner or add them to your Thanksgiving or Christmas menus, like Snoop does. Be sure to read about the health benefits of potatoes.
Cuisine: American
Prep Time: 10 minutes
Cook Time: 35 minutes
Total Time: 45 minutes
Servings: 10
Ingredients
- 4 pounds russet potatoes, peeled and cut into cubes
- 1/2 cup (4 ounces) cognac or other brandy
- 4 tablespoons unsalted butter
- 2 cups heavy cream
- 1/2 cup mayonnaise
- 2 1/2 teaspoons kosher salt
- 1 teaspoon cracked black pepper
Here's how to make it:
- Cook the potatoes in boiling, salted water until tender, about 25 minutes. Drain and set aside. (You could use Yukon gold potatoes instead of russet potatoes.)
- Over medium heat in the same empty pot, add the cognac. Cook until reduced, about 3 to 5 minutes.
- Stir in the butter until melted, then whisk in the cream and mayonnaise. Cook, stirring, about 5 minutes.
- Put the potatoes back into the pot. Season with salt and pepper. Mash until smooth. (Use a potato masher to mash the potatoes.) Serve. Store the potatoes in an airtight container in the fridge and reheat in the microwave.
