Magic Dijonnaise Roasted Potatoes Recipe: Crispy, Creamy & Full of Flavor

Looking for a fresh new potato recipe the whole family will love? This dijonnaise roasted potatoes recipe is absolutely delicious. Inspired by this magic mayonnaise roasted potatoes recipe, my version adds the zest of Dijon mustard along with some savory Mediterranean spice. The result is a potato recipe that's crispy on the outside, creamy on the inside and packed with flavor throughout.

Here's your short shopping list for these magic roasted potatoes: small potatoes (I used fingerlings), mayonnaise (it's what makes the magic), Dijon mustard, garlic powder, onion powder, turmeric, paprika and salt and pepper, to taste. You coat the potatoes in the seasoned dijonnaise, pour the coated potatoes into a baking dish then bake until crispy on the outside and creamy on the inside. Wow!

You can serve these savory vegetarian roasted potatoes as an appetizer or snack, or as a fun side dish with your favorite protein. You could even serve them as breakfast potatoes, or as a gluten-free side dish for Sunday brunch.

Here's how to make it:

  1. In a large mixing bowl, add the mayonnaise, Dijon mustard, garlic powder, onion powder, turmeric and paprika.
