Ingredients
- 3 large beets, peeled and cut into small pieces
- 2 tablespoons extra virgin olive oil
- 2 1/2 tablespoons lemon juice (fresh is best)
- 3 tablespoons honey
Here's how to make it:
- Pour the beets into a baking dish lined with aluminum foil, ensuring they're evenly distributed. (I used a baking pan lined with aluminum foil, which makes for easier cleanup, beets can be messy!)
- In a small mixing bowl or measuring cup, add the olive oil, lemon juice and honey. Add sea salt and black pepper, to taste, if desired. Whisk to combine. Pour the mixture over the beets in the baking dish. (I prefer to squeeze my own fresh lemon juice, but you can use bottled lemon juice in a pinch.)
- Toss to coat beets in the mixture.
- Bake in a preheated 375-degree F oven for about 30 minutes, or until crisp-tender. Stir beets halfway into baking time, if desired, to ensure even baking. Store leftovers in an airtight container in the refrigerator and reheat in the microwave.
